I adapted the recipe from one I found for individual mini chocolate cheesecakes.

You can use any crumbly biscuits you like for the base, even chocolate ones, but I find chocolate cheesecake so rich I think it’s better to have a plain base.

Afternoon tea and the Cotswolds

We’ve just got back from a few days in the Cotswolds (a very picturesque part of western England – see photos at the end of this post!).

On our way to the Cotswolds we made a short stop in Stratford Upon Avon and were lucky enough to stumble across Hobsons Patisseries and their giant scones, whose halves are separated by amazing towers of cream.
