It was my elder son’s 5th birthday recently. It’s taken me a while to blog about this cake, but if you follow my posts you’ll probably already know I gave birth to our second son at around the time of my first son’s birthday and since then I’ve been a tad busy!

As I knew my sons’ birthdays would be very close together, I wanted to make a birthday cake which was simple and quick to assemble. Some internet browsing brought me to this building site / digger cake idea in the form of some photos. I did my best to copy what I saw, using my own cake recipe and various toy construction site pieces I already had.

I found the original recipe for this choc chip cake at My Little Italian Kitchen. But the original recipe was for a large circular tin and I wanted to use my loaf tin… so I decided to reduce all the original quantities by a third. As you’ll see below, this means some of my amounts are a bit odd, but it works!

In my book, a white chocolate cake with raspberry buttercream filling is made for the eighteenth birthday of one of the characters. Luckily for me, it turns out that this is the perfect cake for a party. It’s very rich, so your guests would probably be happy with a smaller slice and it cuts beautifully.

I made a bit of a mistake while baking this cake… but read this post and you can avoid the same slip up!

As you have probably guessed, it was my son’s 3rd birthday recently. Like many little boys, he’s obsessed with anything that has wheels, so I wanted to make him a car-shaped birthday cake. And this is what I came up with. Thanks to my sister for her ideas about the easiest way to go about this and my mum for supervising the car cake decorating (she has many years of birthday cake making experience).

Recipe | Simple lemon cake with feathered icing

This lemon cake is so light and fluffy you could believe it’s calorie free! (It’s not. Sorry)

Ingredients

  • 100 g butter/margarine
  • 100 g caster sugar
  • 2 eggs
  • 100 g self-raising flour
  • 2 level teaspoons baking powder
  • Grated rind of 1 lemon

Method

Line your choice of tin. I used a tray bake tin, but a circular tin would also work. You could also use this mixture to make cupcakes/buns. Preheat the oven to 180 degrees C.

Recipe | Easy yoghurt cake

Possibly the easiest, no-mess recipe I know. You can use any flavour yoghurt you like – I used strawberry this time.

A note on spelling. The most-common spelling of the word in Britain is apparently still “yoghurt”. I cling to thing to this spelling, even though it seems “yogurt” is slowly taking over!
