Still avoiding chocolate in the post-festive period, this week I’ve made easy lemon cupcakes. These are so simple to make using the most basic of sponge recipes plus some lemon zest. I’ve been wanting to try this one for a long, long time, ever since I saw them online last year when searching for ideas for my son’s birthday cake. I got the recipe from BBC Good Food (ever reliable!).

I used flat-bottomed ice cream cones, but I have seen other recipes which use pointy-end cones (technical term there)… but they’re a bit trickier to make and I’m all about convenience 🙂

I chose a vanilla cake recipe, but there’s nothing to stop you filling your cones with a different flavoured cake mix.

But I wanted to post this cake recipe a bit earlier to give anyone who wanted to make it for this weekend time to get their ingredients together (i.e. stock up on mini eggs).

I’ve seen many cakes with chocolate finger borders and always thought it looked like a great idea. And it turns out, it is! 🙂

Recipe | Cadbury’s caramel chocolate brownies

Brownie mix +  a layer of caramel filled chocolate = a cheat to delicious, extra-chewy brownies. Heart-shaped for Valentine’s Day, but delicious every day.

The recipe for the brownie mix I also used for my chocolate cheesecake brownies, I just adjusted the quantities and added a bar of Cadbury’s Caramel. Any caramel filled chocolate would do though.
